July 1–Baked Hummus-Crusted Lemon Chicken

As far as lean meats go, chicken is probably my most used go-to. It’s versatile, light and it’s hard to mess up in it’s simplest form. I am always looking out for new ways to jazz it up beyond my usual spices! So tonight’s dinner a la Pinterest comes from the website The Comfort of Cooking. As preparation goes it doesn’t get much easier–chicken breasts (tenderized and flattened) and a spicy hummus mix that took minutes to prepare. It baked for 30 minutes and was table ready!

I paired it with a chopped salad with kale and sunflower seeds and it was so delicious! It was full of Mediterranean flavors and the chicken was juicy. I was concerned that the hummus would leave a weird texture but it crusted nicely on the chicken. This one is definitely going into my dinner repertoire! And bonus: the website suggested two other recipes that looked so good I pinned those as well 🙂
